Tasting notes

Filled in an intense yellow gold with golden highlights, this Champagne shines under the light, raising a rare purity and richness. This dazzling hue, the result of a careful selection of the best grape varieties, precedes a tasting where each bubble tells the story of exceptional know-how.

To the eye

On the nose

The first olfactory notes reveal the liveliness of citrus fruits from Chardonnay, with nuances of lime and grapefruit. Slowly, the aromas of red fruits, characteristic of Pinot Noir, are revealed, remembering redcurrant, raspberry and morello cherry. By letting the champagne open up further in the glass, the Pinot Meunier unfolds its flavors, offering a subtle link of slightly candied, even exotic fruits, with a touch of pineapple.

The attack is bright, driven by a subtle dosage that preserves all the authenticity of the wine. On the palate, the first flavors confirm the aromas perceived on the nose, with accents of lively citrus fruits, delicate almonds and toast. A sweetness then develops, remembering redcurrant jelly, followed by nuances of black fruits such as cherry, fig and blackberry.

 

As it evolves, aerating and gaining temperature, this champagne reveals delicate touches of plum and pear.

Technical elements

The Grands Noirs from the Montagne de Reims and some white premier cru grapes from the Côte des Blancs are creating this cuvée by displaying exceptional maturity with plots aged over 60 years old.

Manual harvest with selection of the most beautiful bunches.

Main blend with the Grands Noirs from the Montagne de Reims and more than 50% of reserve wines needed for the Bechet de Breux style. A touch (20%) of Chardonnay is added to bring minerality and length.

Systematic malolactic fermentation.

Limited dosage to a few grams per liter.

Total acidity: 4.15g./l.

Alcohol content: 12.8°.

Pairing suggestion

The Cuvée Noire pairs beautifully with pink meats.

Its finesse and delicate aromas enhance the flavors of dishes, creating an unforgettable taste experience.

 

For a sophisticated combination, enjoy with a slightly pink veal escalope, like their very first spring pastures.
